Bordwell has written a wonderful but long post called Godard Comes in Many Shapes and Sizes on aspect ratio, masking, matteing, and shot composition. He provides some excellent examples of the impact that these practices have on shot composition in projection, prints, and dvd transfers. Also, here's a helpful overview of aspect ratio from Panavision.
